SIMPLE DINDIGUL THALAPAKATTI CHICKEN BRIYANI
Chicken Briyani is the most favourite dish of majority of the people which is the traditional dish of Indian subcontinent.Briyani is a combination of proteins ,carbohydrates ,fats and other nutrients .It has anti aging properties ,benefical for digestion and helpful for detoxification. 500 grams of chicken briyani has 360 calories and it gives 39-40% of daily body calories.Lets enjoy making this piquant and aromatic briyani in Dindigul thalapakatti style.

Ingredients
1tbl spoon Corriander seeds
1 tsp Black Pepper
1/2 tsp Fennel Seeds
1 tsp Cumin seeds
6 to 8 Cinnamon stick
1 Bay leaf
1-2 Cardamon
1 star anise
Few numbers Kalpasi
8-10 Cashew nuts
100 grams Onion
12 to 15 garlic
2 inch piece ginger
few Corriander leaves
few mint leaves
3 green chilli
Required base ingredients
1 tsp Oil
1tbl spoon Ghee
1 Cups Seerga samba rice
4tbl spoon Curd
1tsp lemon juice
1tsp Red chilli powder
pinch of tumeric powder
required amount of salt
water and rice ratio (for 1 cup rice = 2 cups of water)
DIRECTIONS
STEP 1: Take 1 cup Seerga samba rice wash well and soak the rice in water for 15 mins.

STEP 2: Grind the briyani masala spices in the mixer jar into fine powder. As per the measurements given in the ingredients list. Keep aside the grinded briyani masala powder.

STEP 3: Now grind the wet ingredients into the mixer jar and keep aside.Follow required measurements in the ingredients list above.

STEP 4: Add the required Oil and Ghee to the vessels and heat. To that add the wet ingredients paste. Fry the paste until the raw smell goes out of the mixture.
STEP 5:To the cooked wet ingredient paste add 1/2 (half ) of the briyani masala powder from the prepared grinded masala.( note : do not add the full quantity,store it for future use) then add red chilli powder and mix it well.
STEP 8: Add Lemon juice and few mint leaves to the dish for flavour and add another 1 cup of water after boling ,add soaked seerga samba rice to the dish.
When rice and water level sum up, switch the flame to simmer and close the lid or cover the vessel with a plate and weight on the top. (Note : Do not pressure cook)
STEP 10: Cook the dish in simmer condition with lid closed for 10 mins and then turn off the stove.
Open the lid after 10 mins the aromatic and delicious briyani will be ready to serve.
Garnish with corriander leaves.

Note : Cooking--Medium flame
After adding water and soaked rice -- Medium Flame to high
when rice and water comes to equal level --High to simmer (close the lid with weight )
Timming (for 10 mins do not disturb)
Serve the dish with raita or egg plant gravy,it goes well with Chicken 65 and bolied eggs.
