                        CURRY LEAVES POWDER (karuveppilai Podi)

                   

    The curry leaves has innumerable health benefits. It is rich in vitamin A,B,C& B2 , calcium ,iron and highly rich in antioxidant properties. Consumption of Curry leaves in regular food diet lowers cholesterol levels,cures gastrointestinal issues, preservers the liver,stimulate hair growth ,prevents cancer,keeps anemia at bay, stops diarrhea,helps to maintain good eye sight.

INGREDIENTS

1/4 Cup Urad dal,
1 tsp black peppercorns ,
3 Dry red chilli ( as required)
4 Garlic cloves,
small size tamarind  ball (optional),
1 tsp gingerly oil,
pinch of asafoetida,
salt as per required.



DIRECTIONS

STEP 1: Wash the curry leaves in running water and place it in plate until it gets dry. keep other ingredients such as urad dal ,black pepper corns,dry red chillis, garlic gloves,tamarind,oil in a plate which is ready to roast.



STEP 2:   Heat the pan and add Urad dal followed by black pepper corns,dry red chilli, then add some gingerly oil, garlic cloves,tamarind to roast until golden brown.


1.Roast urad dal


2.Roast black pepper corns

3.Add dry red chilli and roast


4.Add some gingerly oil and garlic cloves

5. Roast everything until golden brown then add tamarind separately to roast

STEP 3: Now add the washed curry leaves to the pan after drying it in the open air,roast until the leaves becomes crispy.
6.Roast the curry leaves until it  becomes crispy

STEP 4: Transfer the roasted ingredients to the plate to cool down. Blend the mixture of ingredients by adding required salt and asafoetida powder.





STEP 5: Grind the mixture in the pulsed mode.Now the  curry leaves powder is ready to serve.

Note : Store it in the air tight container in the refrigerator and make use of it when needed.It will remain unspoiled for months. 
           Serve it with gingerly oil for idly and dosa.
